Method
-
Season the lamb
Pat the 8oz (225g) Lamb Shoulder dry with paper towels to ensure a good sear. Rub the meat evenly with ½ tsp (2.5ml) Kosher Salt and ¼ tsp (1.25ml) Black Pepper (ground).
3 min -
Sear the lamb
Add 1 tbsp (15ml) Extra Virgin Olive Oil to the skillet. Once the oil is shimmering, place the Lamb Shoulder in the pan. Sear for 2-3 minutes per side until a deep brown crust forms, then transfer the lamb to the slow cooker.
8 min -
Sauté the aromatics
In the same skillet used for the lamb, add the ½ Yellow Onion and 1 Carrot. Sauté for 4-5 minutes, stirring frequently with a wooden spoon to pick up the browned bits from the bottom of the pan.
5 min -
Bloom the spices
Add the 2 Garlic cloves, 1 tbsp (15ml) Tomato Paste, 1 tsp (5ml) Dried Oregano, and 1 tsp (5ml) Dried Rosemary to the skillet. Cook for 1-2 minutes until the tomato paste turns a darker brick-red and the garlic is fragrant.
2 min -
Deglaze the skillet
Pour in 1 tbsp (15ml) Red Wine Vinegar and ½ cup (120ml) Beef Stock. Use the wooden spoon to scrape every last bit of browned flavor from the bottom of the pan. Bring to a simmer for 1 minute.
2 min -
Slow cook
Pour the contents of the skillet over the Lamb Shoulder in the slow cooker. Cover with the lid and cook on the 'Low' setting for 8 hours until the lamb is completely tender.
480 min -
Shred and serve
Remove the Lamb Shoulder from the slow cooker and place it on a plate. Use two forks to shred the meat into bite-sized pieces. Ladle the remaining sauce and vegetables from the slow cooker over the shredded meat.
