Yuzu Gin Fizz
Bright yuzu and gin make this a sharp, citrusy late-night drink that feels clean rather than heavy. The little spoonful of syrupy sweetness rounds the edges just enough, while sparkling water keeps it crisp, lively, and very drinkable.

Method
-
Chill the glass
Fill a highball glass with the Ice and set it aside while you build the drink. Let it sit for a minute or two until the outside feels cold and a thin frost starts to form; if the glass stays warm, the fizz will flatten faster once you pour.
2 min -
Measure the liquids
Pour the Gin, Yuzu Juice, and Agave Nectar into a cocktail shaker using a jigger for clean pours. The mixture should look translucent and pale gold before shaking; if the sweetener clings to the sides, give the bottle or spoon a quick rinse with a splash of the citrus so it all goes in.
1 min -
Add the ice
Drop the Ice into the shaker until it is firmly packed and the liquid level rises around it. You want the cubes to sound solid and feel heavy in the tin; if they are melting fast, work quickly so the drink stays bright and not watery.
1 min -
Shake hard and fast
Seal the cocktail shaker tightly and shake it over your shoulder for about 12 seconds, using short, forceful motions so the metal frosts on the outside. Stop when the shaker feels icy cold in your hands and the sound inside turns from sloshy to crisp and tight; if the seal loosens, press it back on before continuing.
1 min -
Strain into the glass
Strain the shaken mixture into the chilled highball glass over the Ice, using a fine strainer if you want a cleaner finish. The drink should land clear and pale gold with tiny bubbles gathering at the surface; if ice chips slip through, skim them off so the fizz stays lively.
1 min -
Pour the Sparkling Water down the inside edge of the glass.
-
Give the drink one slow lift with a bar spoon so the bubbles stay intact. Stop when the surface is lively and the drink sparkles all the way through; if it goes flat, add a little more chilled sparkling water and keep the stir minimal.
1 min -
Slip the Lime wedge onto the rim and serve the drink immediately while the glass is still frosty. It should smell sharply citrusy at the nose and taste bright first.
-
Lightly sweet at the back; if the wedge feels dry, give it a quick squeeze over the surface before handing it over.
